မႈိ၊ ပုစြန္ အုန္းႏုိ႕ခ်က္


Shrimp and mushroom curry

Ingredients :
  1. 2 tbsp oil
  2. 2 cloves garlic, minced
  3. 1 thumb fresh ginger, minced
  4. 2 ~ 3 shallots, chopped
  5. 1 tsp paprika powder ( or ) curry paste
  6. 3 fresh red peppers ( or ) green chillies
  7. 2 ~ 3 tbsp fish sauce or to taste
  8. 1 tsp paprika
  9. 1 1/2 cups of coconut milk
  10. ½ pound fresh mushrooms
  11. 1 pound shrimp, peeled and deveined
  12. 5 kaffir lime leaves, finely slivered
  • Heat 2 tbsp oil in sauce pan over medium-high heat.
  • Add garlic, ginger and shallots. Cook, stirring for 2 minutes.
  • Add paprika powder. Cook, stirring, for 1 minutes or until aromatic.
  • Add mushrooms. Stir to combine.
  • Slowly add coconut milk, stirring constantly. Cook, uncovered, for 10 minutes or until sauce thickens slightly. Reduce heat.
  • Add shrimps. Cook for 3 minutes or until shrimp just turn pink.
  • Discard kaffir lime leaves.
  • Serve hot with plain steamed jasmine rice.
